Today's the day ...................... to bake a cake

This is a warm, not long out of the oven, fruit cake - made from a recipe given to me by my lovely welsh mother-in-law many years ago. It's the sort of cake that says 'tastes better if left for a few days'.

All I can say is - Mmmmh, chance would be a fine thing .................


Here's the recipe if you want to have a go:

Ingredients
½ pint of cold tea
4 oz margarine
4 oz demerara sugar
10 oz dried fruit
1 tsp mixed spice
8 oz sifted flour
1 egg
1 tsp bicarbonate of soda

Method
Put in a pan all but the flour, egg and bicarbonate. Bring up to the boil and simmer for 10 minutes. Leave to cool for a while and then mix into the flour and bicarbonate in a bowl together with the egg.
Bake in a lined tin for about an hour at 160ºC (325ºF, Gas Mark 3).
