Seville orange curd 2.

Oh my....if you only make one thing this week, make this curd....if you love a really strong orange flavour, make this. If you love the bitterness of marmalade, but it's a bit of a faff to make....then make this.

Recipe ingredients are:

100g butter
225g sugar
3 eggs plus a yolk, whisked
Zest and juice of 3 oranges

Put the butter and sugar into a Bain Marie and stir till melted.
Add the oranges and stir.
Add the eggs, stir.
Stir for about 15 minutes until thick.
Pass through a sieve, then remove about a tablespoon of zest.
Add this back into the mixture.
Put into clean jars
