Granita

This afternoon we made watermelon and mint granita. So so delicious.....

Medium sized watermelon
Juice 1/2 lemon
50g icing sugar
1/2 bunch chopped mint

Chop melon and whizz in blender. Push through a sieve. Add lemon and whisk in icing sugar. Add mint. Pour into shallow container eg. baking tray. Pop into freezer, and every 20 mins, stir about with a fork, scraping away bits from the edge. Repeat, until 3-4 hours later you have a tray of pink crystals. Lovely.
