Monday 31 January 2011: Souptych
On opening the fridge this morning I noted that there was an abundance of peppers and half a tumshie which needed cooking.
Chucked them in a roasting pan with a load of garlic, a couple of onions and a dose of paprika. Roasted it all slowly for an hour or so, then added it all to a big pot with some red lentils, stock, tomato puree, some more paprika and black pepper. Let it simmer until the lentils were cooked and then attacked it all with the whizzer.
Result - a very tasty lunch and a blip at the same time. Not being far from the kitchen has to be another advantage of working from home.
