Olivia: The Return

Sooo.... we drove to Austin this afternoon after my Preview Day at UNTHSC was over in Fort Worth.
That's 5 hrs of driving yesterday morning, 3 hrs this afternoon, and 4.5 hrs tomorrow evening for me. Oh my gosh. I was exhausted.
But we got to go to Olivia for dinner again which made everything worth it. (I mean aside from being with my brothers, of course.)
I took one of the menus home with me.
Here's what our meal consisted of with two brothers, my mom and dad, and one niece who didn't partake of any food:

foie gras strawberry-rhubarb compote, lardons, brioche
10 bluepoint oysters {ct} honey mignonette
grilled escargot skewer garlic-parlsey butter, potato dip
beef carpaccio arugula, fried capers, shallots, sea salt, parmesan, dijon mustard (we got three orders, btw - it's my favorite)

olivia salad garden greens, smoked tomato vinaigrette
romaine hearts lemon-parmesan dressing, white anchovy, croutons
beet salad pure luck feta, red onion, cracked pepper, red wine vinaigrette

crispy soft shell crab potato gnocchi, english peas, preserved lemon-cream
wild atlantic salmon potato chips, asparagus, ginger vinaigrette
ribeye sauteed spinach, crispy red onions, maytag blue cheese

it was phenomenal. have i said that before? i'm sure i have. i'm just glad that my dad finally got to go with us. and i feel ridiculously lucky (blessed) to have been able to go there two saturday nights in a row.
