Fools?

Maybe we are, to try to make our own foie gras, but we've had a lot of help and advice. Last night's 'class' in preparing the foie gras for conserving turned into a whole evening's enjoyment when we found that our friends had prepared a meal for us too! Vegetarians look away now, because we had barbecued skewers of duck hearts with fresh salad from their garden, with a bottle of good local red wine too, of course. Mercè plan* to G. and A. for all the help, and lending us some essential equipment too.

This is the huge pan and thermometer we use for preserving and it took an hour to reach the necessary 100 degrees this morning. The jars of foie gras are in there. I'll try and take some outdoor photos tomorrow.
