Tom Kha Kai

Or 'Tom Kha Gai'. A Thai coconut and galangal soup. I serve this with pilau rice, A chicken breast which is cooked in the soup and prawn crackers. The soup is made of coconut milk, lemongrass, lime leaves, chillies, ginger and galangal. I season it with 'nam pla' which is a Thai fish sauce, salt and and palm sugar. Very refreshingly nice if I say so myself. I love eating this kind of food for lunch, so I did! It is part of my new lunch menu.
