Tart Tatin of Sweet Shallots, Dates and Almonds

This 'upside down' tart is one of my most popular vegetarian dishes. I make the shallot, date and almond compote, place it in a pan and then place the puff pastry on top before cooking it. Then when it is cooked I turn it over onto the plate and serve it with a pine nut and raisin salad.
