Hazelnut Praline

This is hazelnuts and caramel. I blitz this to a rough powder and then use it for a parfait of nougat glacé. That is a frozen dessert which is made out of meringue, cream, praline and mixed peel and i will serve it with raspberry compote and maybe an apricot agar agar jelly.

Happy birthday to my beautiful wife today too!
