Apple and Onion Coulis

I'm having roast pork tonight, was meant to be Sunday dinner, but turns out I'm being taken out for dinner tomorrow night, so Sunday dinner tonight, yum!

Apple and Onion Coulis
2 apples, peeled, cored and chopped roughly
1 small onion, sliced
1 tbsp olive oil
1 tbsp water
1 tbst distilled vinegar
1 tbsp brandy
2 tsp sugar
2 tsp grated cinnamon

heat the oil (medium heat, 4 on my electric rings) in a thick bottomed pan and add the onion and apple, stir occasionally till the onion softens then add the water, brandy, vinegar and the sugar, then grate in the cinnamon

now cook covered, adding brandy occasionally when the pot dries until the apple has softened completely (about 20 mins).

cool and blend to a puree

I put it in the fridge before serving over the warm pork
