Pickled Onions

There are these food trucks that opened up for the summer next to my building at work. As much as the idea of "street meat" freaks me out, there is one that has Banh Me sandwiches, and they are delicious. My favorite part is the pickled veggies. I stuck with red onions for my own version (the pink is so pretty!), and added in garlic and hot peppers. Can't wait to try making my own version of this sandwich tonight.
