In lieu of a memory

Aubergines...

The first of the aubergines just coming on. I am expecting a good yield this year. I will smoke them on an open flame then seal in a bag to steam. This is then mashed and mixed with yoghurt, smoked paprika, lemon, garlic and salt and pepper. A delicious dip with toasted pitta for a lazy Summer lunch.
