One of our two a week....

Did you know that you are supposed to eat two portions of seafood a week? It's good for your heart, good your head and good for just about all of you.

Some folks think it's hard. Part of my job is to show people it's not. But austere times mean DIY - stuff the nutritionists that we used to pay to write recipes, stuff the photographers we used to pay to photograph them. Now all you have is me (and takefive) !!

So TakeFive does the recipes and I do the photography and sometimes vice-versa.

Tonight it's moi - my fav salmon dish. This is WIP and so easy.
- Whirr some bread and parmesan in your magic chopper (you bought one when you were weaning the little ones and it's been at the back of the cupboard since)
- spoon pesto from a jar on top of salmon fillets
- add the whirred breadcrumbs - press down firmly
- bake in a hot oven (gas mark 7) for 18 or so minutes depending on how thick your salmon is
- give a couple of minutes out of the oven before you serve
- I like to serve with new potatoes and peas.
- pour a glass of vino (each!!)
- enjoy !

25 minutes start to finish.

Delicious. And sooooo good for you (well, other than the lumps of butter on top of the potatoes and peas.....)
