Summery Duck

Confit duck leg on a chorizo and spinach paella with black pudding and chorizo oil.

The paella is a meaty one without fish. The smoked paprika gives it a distinct Spanish flavour and together with the succulent duck meat and the semi crunchy black pudding cubes is makes a nice mouthful.

It just made me think of cassoulet, I will book that one in for the autumn.
