Butternut Squash Risotto

Always a favourite especially with wee bit of red chilli. I know it's hypocritical but we only use butternut squash from Europe. I mean what's the point of using a fresh product that's shipped halfway around the world - anyway, this comes from Greece and they need the money.

I should say I'm so anal I do read the labels to find out where it was sourced from - doh!
