Red Cabbage

My good friend Ian (a great gardener and countryman extraordinaire) contacted me to inform me he had a red cabbage (or two) too many.
The cabbage was ENORMOUS and after cutting about a quarter of it I made industrial quantities of coleslaw,
...looks like I'm pickling tomorrow! - any other suggestions welcome ;-)
