Gardener's Lament

Who knew I'd be drowning in red onions when I planted them last spring? This is only a fraction of what I haven't managed to give away or use already. So, what to do with red onions? I've managed to find a few recipes my family will eat over and over. Here's one of our favorites:

Asian Cucumber Salad

2 cups thinly sliced* seeded peeled cucumber
1/4 cup thinly, vertically sliced red onion
1/4 cup matchstick-cut carrots
1 tablespoon sugar
1+ tablespoon chopped fresh cilantro
2 tablespoons fresh lime juice
2 teaspoons thai fish sauce
1/8 teaspoon salt

Put all ingredients in bowl and toss to combine.



* Personally, I do not recommend using a mandoline.
