My grandma makes the best zucchini pasta ever. She is currently in Sicily, so I am unable to visit her house and satisfy my craving for zucchini pasta. The next best option? Improvise in my own kitchen. I peeled, chopped up, and boiled one zucchini. I then added pasta, and once that was done, I reserved a little bit of cooking water, which I poured into a bowl along with the zucchini and pasta. Parmesan cheese was added to the top, and viola! All done! I have no idea if this is the way my grandma does it, but it came out well. Not as good as hers, though.
