Dressed with apple juice

Today's salad was a combination of cucumber, avocado, carrot and spinach with a little seaweed and saurkraut. The dressing was simply fresh apple and lemon juice. Colour, crunch, a bit of fat, a hint of mineral & fermented saltiness, and surprizingly sweet (from the carrot?). This is just half the quantity that I ate. I didn't call my business raw appetite for nothing.

Mmmm.
