Lettuce-leaved basil

From a late September sowing and kept on a south facing window shelf, this basil now has impressively large leaves. Take a thin slice of chicken breast and lay a thin slice of ham on it, then lay the basil leaf on the ham. Roll up and secure with a cocktail stick. Repeat until you have enough "involtini". Add a few drops of oil to the pan and cook over moderate heat until the chicken is coloured. Sprinkle with salt and pepper and turn the involtini over and cook until brown on the other side. Add 25 ml of white wine, cover the pan and simmer over low heat until the liquid has almost evaporated.
