Courgette, fresh pesto & yellow pepper sauce

I didn't have any lunch today so I was really looking forward to dinner.

Before I went to work, I 'roasted' the courgette and peppers for a short time in the dehydrator. It made a big difference to the texture and flavour if this dish, which in the summer I tend to eat straight. The courgette strips are more pliable and the peppers beome more mellow; the softness makes the pesto sing.

I could have used tomatoes, or red peppers in the sauce, but I had a yellow one that needed using, so I did. Just as good.
