Like the Rosemary earlier, it is not usually in flower in December. It can be used in the stuffing for the turkey or to flavour other meat. I made a variant of the "uccellini scappati" recipe here. This translates as "little birds that got away" meaning that if the hunter has not brought any home you can have them anyway. This is for "uccelloni" because they are big. Take two chicken breast and place some herbs, salt and pepper on the flatter surface and lay the other on top, flatter side down. Rap the breast in two generous slices of back bacon, one on each side. Using kitchen string, tie around the shorter dimension at one end, round the longer dimension and then twice more round the short. Prepare one "bird" per person. Roast in the oven at 160 degrees for about 45-60 minutes on top of potatoes cut into wedges with some oil poured over. Enjoy.
