Fred!

This is almost 3lbs of prime USDA sirloin tip. It's named Fred in honor of the original butcher who concocted the marinade which makes it look a bit like a miner's lung. Schaub's Meats is the only place that still sells "Fred."

Recipe attempts at replication for the marinade are on the web (just Google Fred Sirloin Tip). The original ingredients are still held secret, but it includes marmite, vegamite, red wine, Worcestershire sauce, garlic, salt, molasses, brown sugar, along with the secret stuff. The meat comes from grain fed cattle and is dry-aged for 21 days.

This one will be our Christmas Eve dinner - roast beast...
