I am still plowing through the Christmas goodies. My gran used to make the best Christmas cake & Christmas just isn't quite the same without her massive cake so this year I decided I would make one. I've never made Christmas cake before and didn't realise there was so much involved. First to make the cake then feed it with rum for a month before covering it with a mound of marzipan & finally to ice it. I did have a slight dilemma with the icing as I had made it too runny & it slid off so to save it I had to scrape it off add more icing sugar to thicken it then slapped it all back on & waa laa one delicious humungus cake. God knows how I'm gonna finish it! Slice anyone?
