Noble baron

This fine fore rib, supplied by our village butcher has been roasted for two hours and rested for the same time. I am usually a bit sniffy about Spanish beef but on the evidence of a quick slice it is going to be meltingly tender.

Now I just have to hoik the boys from their slumbers so that we can share our NY day dinner.
