Pudding for breakfast: chia & coconut

I know it look similar to frogspawn, and for someone who has aways hated tapioca, sago and such, it's surprising that I took to this.

However, they taste quite neutral which is why I soaked them in delicious cocunut milk and vanilla.

Those teeny weeny chai seeds are an exceptional source of Omega 3, anti-oxidants, fibre and a range of minerals notably calcium and protein. They help to regenerate body tissues and build endurance: athletes take note. I'm off to chase the pigs in muddy fields now.
