Paella de cerdo con chorizo y espinaca

... or rice with pork, chorizo and spinach. This is the first of my attempts to satisfy number 16 on my 'forty before 40' list, which is to cook a new recipe every fortnight. The recipe is taken from the excellent Moro cookbook and is a variation on the paella I usually make with chicken and prawns. It tasted delicious, even if I do say so myself.
