Male Eider Duck (Somateria mollissima) displaying to female.

They inflate a pouch in their throat and make an oooOOOHHHhh sound.

I have played around for ages with this image and I am posting this version mainly because it shows the eye. I am having difficulty photographing B&W birds because of the need to preserve detail in both the black and the white feathers. My immediate instinct says bracket the exposure and apply HDR techniques but that is not possible with a mobile subject.

Does anyone have any suggestions?

The only possibility that occurs to me is to photograph under extremely flat lighting conditions but who can dictate those?
