Lighter meal for lighter days

I had a hankering for quinoa today. As I hadn't sprouted any, which is normally how I'd prepare it, I cooked it simply instead and let it go cold.

To this base, I created a salad by adding crunchy: carrots, cucumber, celery, yellow pepper, apple, and pea sprouts. The dressing was oil, vinegar, pomegranite syrup, s&p.
