Well these were going to be red velvet cupackes. However I lacked the ingredients to make them red or velvety so I thought I would make cupcakes with a topping. However I messed up the topping due a trans atlantic misinterpretation concerning types of sugar. Soooooo the end result was......mini victoria sponges with icing!
Thank you Claire this is a gift that keeps on giving. I shall make something from it when you come to stay. After making sure that I have all the necessary ingredients of course!
