Red Velvet Cupcakes

I am sooo impressed with my red velvet cupcakes with cream cheese frosting!!!

Awsomo & I had red velvet cupcakes for our wedding cake & a giant marshmallow cupcake on top. They were so yummy, and until now, I never appreciated just how fiddly they were to make!

Iv made these bad boys for my darling Grunny Wack whose birthday it is tomorrow. Although she's not in the best of health just now, I know she'll love the effort I put into making these for her, and hopefully she'll fancy trying one.

She loved our wedding ones so much & has asked on more than one occasion for me to make her some. Fingers crossed these are as nice as the ones we had on our special day.
