Salmon Parcels with Italian Vegetables

I haven't done a food blip for a long time , so decided to do this today.

This is just about to go in the oven.
One of my favourite ways of cooking salmon and I think the easiest.

4 fillets of salmon
8 basil leaves
1 green pepper
1 large red onion
2 ripe beef tomatoes
1 lemon
butter
sea salt and black pepper
4 pieces of foil

Place the seasoned salmon fillets on the foil. Grill the green pepper to remove the skin. Chop the onion and pepper into longish pieces, tear the basil leaves, mix together and place on top of the salmon.
Rough chop the tomatoes, season and place on top of the vegetables,.
Slice the lemon thinly and place over the vegetables, add a small quantity of butter and seal the foil.

To BBQ place the parcel on some more foil and seal tightly.
Grill the salmon parcels on the hottest part of the BBQ for about 20 minutes.
To cook in the oven ( which I did tonight) Place the parcels on a baking tray and cook for 15 to 20 mins. in a hot oven.

Serve with new potatoes, a salad, or green beans,... or all these!


Hope we will soon have the BBQ weather back again.
