Hedgehog Mushrooms

This collection is ready for the pan. These fungi are easily identified by their spines which point downwards from beneath the cap. They do not have gills. Here is my recipe:

Prepare a deep frying pan with butter garlic and single cream.Bring slowly to the boil.
Place as many of these mushrooms as will fit into the pan over moderate heat. Garnish with salt and pepper and chopped Basil.

Cook for about five minutes turning the mushrooms constantly.

Good with all meats, or on its own. These are one of the best varieties of edible mushrooms, and are to be found in both conoferous and deciduous woodlands.
