Today was a perfect day. Picking berries along the old railway path and home to make muffins.

Apple and Blackberry Muffins

10oz Plain flour
6oz Caster sugar
1 teaspoon baking powder
3 fl.oz corn oil
8 fl.oz milk
1 egg
2 large handfulls of blackberries
2 apples chopped into small pieces
granulated brown sugar

-Sift together dry ingredients
-Beat egg and add to oil and milk
-Add berries and apples
-Mix all ingredients together quickly and roughly
-Divide between 12 muffin cases and sprinkle brown sugar on top.
-Bake at 200º for 20 min.
