Pancake Sunday

It was a lazy day today and I was up hours before everyone else so had time to make bread, scones and of course the boys' favourite for breakfast pancakes. I have my griddle that I got when I got married (34 years ago) and never washed, I use an old deep soup spoon from my Mum to get the shape and my Granny Devlin's recipe handed down via my Mum. 8 oz flour, 4 oz sugar, 2 eggs, 1 oz butter/marg and milk to make it a dropping consistency and cook. This makes about 16 pancakes. They are delicious. I would hate to think how many I have made over the years but probably well into the thousands if not tens of thousands!!
