Lots of leeks

Behold, the Friday leek harvest. We uprooted, rinsed, trimmed, cut, and re-rinsed 90 some leeks today for our Saturday farmer's market stand and restaurant orders. The whole process took around 4 hours between 3 of us, which is only a fraction of the total man hours worked today: our farm staff of 8 spent 13 hours harvesting, cleaning, and packing lettuce, spinach, kale, chard, leeks(!), parsley, cilantro, and broccoli for tomorrow's deliveries. Sun up to sun down. Plus 3 hours yesterday evening preparing the scallions. Friday harvest is a massive workload and is expected to only increase as we enter the summer.
