Flitch of bacon

We went to Fran's Uncle Johnny & Auntie Frans house today and Johnny, as per normal was cooking in the kitchen (he is a gourmet chef!).  He had a slab of meat and was cutting thick slices of bacon from it.  I had never seen a slab of meat like it before, having only ever bought sliced bacon.  I was informed that it is a Flitch of bacon.  Everyday is a learning day.
