Sour Dough

with instructions from Paul Hollywood I have made his version of Sour Dough using Flour, Water & an Apple.
The Pen mark is where it started off & now look at it.
What I don't get is "Why do you have to dis-guard half the mixture before adding more water & flour" What a waste!!
