Upside down Pineapple Cake

Well, this took my back to my youth, baked my first Upside down Pineapple Cake.  Sophie has tried pineapple and now she cannot get enough of it!  so the ideal opportunity came about to make one of these.

It was stunning!  Luckily, Oscar doesn't like to eat anything remotely to do with a 5 a day diet and Fran is on a health kick so no puddings for her;  Sophie & I get the lot :)
