Cake (again)

A 'more fruit than cake cake' inspired by my Leon book of Brownies, bars and muffins.

Messed around with the recipe and method slightly and this one definitely cooked better than the last - less dense but still quite fudgy and sticky. Possibly needs a bit more sugar or syrup as I cut 100g out but cutting the bitter down from 125g to just 50g hasn't harmed it at all! Buttermilk essential to make the bicarbonate work.
