Wild Watercress

A couple of weeks ago, D and I went on an exploration to find an ancient underground spring, which emerges at a place called Big Spring in the Trinity Forest in Dallas. It was not open to the public, but a very nice lady called Zada Pemberton, whose land it used to be on, kindly took us on a guided walk to see it. The water has been carbon dated back to the Archaic Period - about 8000 BC! But unfortunately we didn't have the right equipment to be able to collect any to drink! However, we did find lots of wild watercress growing in the stream and Zada generously let us forage some for us to take home.
When I got it home, I put it in a container of fresh rainwater and put a fish tank filter pump in it to keep the water moving.
The watercress seems to be thriving in its new environment and has provided us with some delicious sprigs in our salads.
