Double ginger cake

I have been reviewing a cookery book called Sugar and Spice. I am really enjoying the author's writing - she's from Sri Lanka. This recuoe has both fresh and candied ginger it. IWhen I bake again, I would bake a little less as is it quite crispy on the edge but it does taste great!
