Goose Egg Custard

Over the weekend I acquired some beautiful Goose Eggs.   They make wonderful egg custards and, even though I say it myself, this one was no exception.  I've never baked a cake with Goose Eggs but will shortly be 'having a go'.    I made a large Omelette which was delicious.   Any hints or suggestions would be most welcome. -:)
