The green seeds have a sweet nutty texture,and can be added to fruit salad or ice cream. The ripe seeds can be used whole in apple pie and is used to flavour. Chartreuse.

The leaf is used in salad dressing or omelettes or with tart fruits like rhubarb. Even the root can be eaten.

The whole plant has many medicinal purposes, the Romans used its antiseptic properties to make a mouthwash to be used for toothache. Old herbal books suggested it was a valuable tonic for girls aged 15 to 18. And the boiled root was prescribed to strengthen the elderly!
