A "Poxy" shot - BUT ...

I couldn't pass it and ... It helps me ask "The Question".
On the left    >>>------> "Lime" Marmalade - Kinda yellow(ish)
On the right >>>------> "Lemon & Lime" Marmalade Kinda green(ish)
Any Biochemists out there care to hazard a guess.
1. Accidentally miss-labelled?
2. What warped chemistry makes Lime & LEMON greener than straight Lime?
3. Too much colouring added?

and YES there IS a "U" in colour !!!!!-!!
