The problem with Cider is most manufacturers label them based on their own measure, and that can vary... quite wildly between presses.

The real trick of working Cider at a beer festival is having a random stranger walk up to you and finding a really good cider that they enjoy with only a couple of tastes. I tend to have a few stock phrases that I pull out to try and really get to the heart of what they like. I've managed to convince hardened ale drinkers not only to try a couple of ciders, but actually that to go away with a half of cider.

But sometimes you've just got to take the bull by the horns and tell the truth up front. It's not a medium sweet cider, it's just not quite as sweet as their other one.
