Une galette super complète (faite par Lionel)

A galette is a savoury pancake, traditional in Brittany, usually made with buckwheat, and folded from a circle into a square, enclosing a filling.
If it is "complète", the filling is bacon/ham, cheese, and egg. When we were in a small town called Domfront, near Le Mans, last week, we ate ones that were "super complète" which meant the filling included sliced tomatoes - delicious! So today Lionel made some for our lunch, and here you see mine, keeping warm on top of the Aga, just before I ate it! (I did cook it some more, as the egg was too raw for my liking....)
