Elderflower Champagne

A fortuitous wrong turn this afternoon found us up a dirt track and at a dead end with an elder bush full of flowers (ours aren't out yet).

So, I nabbed a few and made some elderflower champagne when I got home. This time I'll be leaving it a bit longer before bottling so fingers crossed that this year we get more than a mildly sparkling elderflower cordial!
