More cooking - apple chutney this time

Spent the morning doing some work on content for young people in prison and spent the afternoon preparing the chutney.

This was a recipe found in a magazine in a holiday cottage a few years ago and one which we've made every year since as it is so tasty - and simple.

1kg onions, 1.5kg apples, zest and juice of 2 lemons, 700g of demerera sugar, 400g sultanas and 500ml malt vinegar. Slice onions and apples, chuck everything into a big pan, bring to the boil, reduce heat and simmer until good and think. We peeled and sliced our way through twice as many apples and onions as we made double the quantity.

Time for a walk after that, amazed to see some baby ducklings on the lake in Mote Park this evening. Rather late in the year. I wonder what their chances of making it through the winter?
