The Pumpkin Loaf

Baked by Daughter in Law #1, to encourage those on the House Clearing Team.  Quite delicious and very moist.

I thought there was treacle in it, but I am told it is mainly pumpkin, nutmeg and cinnamon.  I must book a "Bake Off" lesson, and observe her method using her all singing, all dancing KitchenAid.

Here is the pumpkin bread recipe. It is in American measurements and temperatures, so you will have to convert if you don't have cups.
Pumpkin Bread:
4 eggs
1 C cooking oil
2/3 C water
16 oz. Canned pumpkin (Libby's is a great brand, or you can look up a recipe to make your own pumpkin puree)
3 ½ C flour plain flour
3 C sugar
2 tsp baking soda
1 ½ tsp salt
1 ½ tsp cinnamon
1 ½ tsp nutmeg
Beat eggs; add oil, water, and pumpkin. Mix well. Add dry ingredients and mix well. Pour into greased and floured (or lined) pans. Bake at 350 Fahrenheit (about 176 Celsius) for at least 1 hour. Test with toothpick. If still moist, try another 10-15 minutes. Let cool 20 minutes in pans, then remove onto cake racks until completely cool. Makes 2 loaves.
